The guidelines for the German Food Code regulate the ingredients of meat and meat products. Conformity with the specifications stated therein can be verified, among other things, by histological examination.
Histological detection of bone particles is an important parameter for assessing the quality of processed meat and meat products. This can be used, for example, to exclude or detect the use of mechanically separated meat.
For the examination, meat products and sausages are prepared and cut into microscopically thin slices. These are then stained and evaluated under the microscope.
